These “brownies” are absolutely yummy! They are available on Pull ups & Peanut butter facebook page: http://www.facebook.com/pullupsandpeanutbutter
I made mine a bit too thin, but they are perfect for tea-time I really do encourage you to visit Pull ups & Peanut butter facebook page, they have so many recipes that are simply delicious
Recipe from their facebook page:
1/3 cup cacao (Try using cacao instead of cocoa…its a lot richer and the health benefits are endless)
2 1/2 cups of dates
1 cup almonds (You can cheat and use almond flour)
1/2 cup mixed nuts (You can buy them from Manoli’s- they are also very cost effective)
2 tsp vanilla essence
2 tsp water
Pinch of salt
Add all of the above ingredients to your food processor and blend. This can be quite taxing on your food processor so you may want to blend in two batches. They mixture should be smooth and sticky.
Line a tray with tinfoil and squish the mixture down making sure that it’s flat and even.
On the stove melt:
1/4 cup sugar free peanut butter
2 tbs honey
2 tbs coconut milk
Melt until smooth but do not boil.
Spread this mixture over your brownies and pop into the fridge.
Allow to set for about an hour or two…these brownies can be frozen and defrost beautifully!!!
As you can see mine are very thin, but you can use a smaller baking tray and make them thicker!
