Weekend Cheat Treats

As it is a FRIDAY I am going to give you all a delicious, healthy, weekend breakfast idea! And it is… drum roll… PROTEIN PANCAKES!! Yum 😛 These pancakes are really light and packed full of flavour, especially with the little tweaks that I made to the original recipe 😉

Ingredients:

  • 1 3/4 cup freshly ground oat flour ( I used oat meal and blended it to get a flour-like consistency )
  • 1 teaspoon of sugar
  • 1 tablespoon of baking powder
  • 1/4 teaspoon salt
  • 1 cup of milk
  • 1 1/2 tablespoons of canola oil
  • 2 large eggs
  • 1/2 teaspoon of vanilla essence

Mix all the wet ingredients together in a bowl, an the dry ingredients into another bowl. Add the wet to the dry and mix until you have a smooth consistency. (Make sure to mix in any lumps, you can use an electric whisk to ensure you have a smooth consistency)

If you want to add protein to your mixture, like me, you can add a scoop of whichever protein powder you prefer. And I use coconut oil for frying 🙂

Processed with VSCOcam with f2 preset With my protein pancakes, I add Greek yogurt with some honey and raspberries 🙂 This is a ‘cheat’ meal for me, and it is a great healthy start to the day! These pancakes really do taste delicious and are WAY better than having unhealthy pancakes full of sugar.
